BBQ Chicken Flatbread Pizza

I'm always on the look out for new, tasty yet simple recipes (I leave the real culinary experiences to the hubs).  Lately we have been enjoying the Stonefire Flatbread Naan.  Typically we throw a little tomato sauce, some sliced tomatoes, mozzarella, basil and garlic and toss it in the oven... but this time round we didn't have those ingredients on hand.  Hmmm... throw on some leftovers and call it BBQ Chicken Flatbread Pizza.

What you'll need:

  • Flatbread (we prefer Stonefire Flatbread Naan, but we've also used Greek Flat Pita bread)
  • Sliced Chicken Breast (cooked, we cooked ours in the oven with a little BBQ sauce smothered on top or leftover chicken)
  • Caramelized onion (we used red onion, caramelized in real butter ;-)
  • BBQ sauce (any brand will work, we prefer brands without added high fructose syrup)
  • Broccoli
  • Cheese (we used shredded mozzarella, and gruyere)
Preheat the oven to 350.  Cook the chicken breast OR use leftover chicken.  Caramelize onions.
Once the chicken is cooked, slice thin or cut into chunks (bite-able sizes).  Spray flatbread lightly with olive oil.  Stick in the oven for 5 minutes to warm and toast slightly.  Once the edges begin to brown, remove from oven.  Lightly spread flatbread with BBQ sauce.  Add caramelized onions, and sprinkle with mozzarella cheese. Then add chicken and broccolli.  Lightly drizzle more BBQ sauce over the top.  Grate gruyere over it all.  Pop it in the oven until the chesse is melted and the edges are a golden brown.  Enjoy....

Spring has sprung... or so I thought!

Leaving work last week I stumbled upon the cutest little bunny in the parking lot...
And when I got home, I found our crocus had started to bloom...(excuse the state of our beds... it's a 'working' progress)
Yay!!!  A lovely 60 degree day in the Northwest.... could it be, would it be the start of spring?!?!

Unfortunately, it only lasted a day and I returned home from work the following afternoon to find our crocus closed up...waiting for another warm spring day...

We're having a baby!!!

I am 14 weeks this week.  And while I've been feeling the pregnancy for quite sometime now (constant nausea, fatigue, not to mention the frequent trips to the bathroom in the middle of the night).  I don't think that it actually hit me or the hubs that we are having a baby until we saw the ultrasound a few weeks ago.  We had an ultrasound early at 8 weeks, and it didn't look like much.  But this most recent ultrasound looked like a baby!!!  It was amazing!  We could see he/ she swimming around, doing somersaults and being very active!  It was such a relief to see our baby moving around in there, it's little heart beating!  I think it's normal that every new mother is uncertain between OB visits, 'is the baby ok', 'am I eating enough for us both'?!?  To say seeing the ultrasound and hearing the heartbeat is a relief... is an understatement!!!  We're so excited for our little one to join our family!!!  Only 26 weeks of waiting ahead of us... give or take :-)
A little 14 week instagram, taken in the bathroom at work ;-)
